To prepare this summer dessert we can use fresh apricot jam to make a tasty tart – apricots are usually in season during June.
The Italian Crostata
The Crostata is a typical Italian dessert, appreciated by adults and children alike, and is very simple to make. It only takes 20 minutes to prepare and 30 minutes to bake. It’s considered a “humble” dessert, made with easily available and simple ingredients and can be enriched with a variety of jams.
We’re using apricot jam (marmalade) in this recipe since we’re in June, the month where you can find delicious sweet, ripe apricots, but you can replace apricots with any other fruit jam! If you don’t know how to make home-made jam you can just buy it at any Italian supermarket.

Ingredients
The ingredients you need to prepare the apricot tart are:
300 g type 00 soft wheat flour
130 g sugar
125 g butter
1 egg
a pinch of salt
You will also need: apricot jam, a rolling pin for the pastry and a baking tin.
Method
To make the pastry, first melt the butter in a saucepan, then mix it in a bowl with the flour, sugar, egg, and salt. Mix and knead the ingredients well to make a firm dough.
Separate three-quarters of the pastry and roll it out with a rolling pin. Then place the dough in the baking tin and spoon the jam into the pastry case.
Now you can take the pastry left aside, cut it in strips and arrange those on the jam in a diagonal lattice pattern.
Bake in a 180°-200° preheated oven for 30 minutes.
